Southern – Style Chicken Breasts with Preserved Lemons

This time of year will find most of us pressed for time and wondering what to make for dinner. The general idea is to get in and out of the kitchen in record time. My recipe for Southern Style Chicken Breasts with Preserved Lemons is easy to make, gets you in and out of the kitchen in less than an hour and the flavor is  scrumptious. And you remember those preserved lemons we made a month ago, well, they are finally ready to be used for  holiday recipes.

Another good thing about this recipe is you can make extra and and put away for leftovers. As a matter of fact, it is at its best when served the next day.

Ingredients

4 large chicken breasts, butterflied
A/P flour, about 1/2 cup
1 Tablespoon granulated garlic
1 teaspoon fresh ground black pepper
1/2 teaspoon fresh or dried thyme
Olive oil
3 Tablespoons preserved lemon juice
1 Tablespoon honey
2 teaspoons capers
Sun-dried tomatoes, cut into thin slivers
Preserved lemon peels, slivered
3-4 Tablespoons unsalted butter
Instructions

Butterfly chicken breasts, removing cartilage and excess fat. Add garlic, black pepper and thyme to flour and mix well. Add enough olive oil to a cast iron or regular skillet to coat the bottom well. Heat. Dredge chicken breasts in flour mixture to lightly coat. Brown each chicken breast on both sides. Set aside on a plate or cookie sheet to rest until all the chicken has been browned. In another saucepan, melt butter. Add lemon juice. Allow to cook until reduced half way. You will want the sauce to thicken a bit. Add 1 tablespoon honey. Add sun dried tomatoes, capers and lemon peel to mixture and cook for 1 minute. Wipe excess oil from skillet used to cook chicken and return chicken to skillet. Pour lemon and tomato mixture over chicken. Place chicken in a 350- degree oven, cover with lid or foil and allow to cook for 10 minutes. Finish with a fresh squeeze of lemon juice.

Tip:  Cut pith (white part of lemon) before cutting into slivers to avoid bitter flavor.
