Grilled Shrimp Salad

My trips to the local waterfront always nets me a special treat from the fresh catch of the morning. Having grown up in Florida and with family members who on a weekly basis brought home the “catch” for the kitchen table, it is not surprising that anything less than fresh just won’t do for my recipes.

Among the selections made from a recent visit, I picked up a good staple for stir fry and grilling as I laid out the menu for the week.

When I think of a luscious shrimp salad, I always think fresh. Nothing is quite like the taste of fresh shrimp, especially when served as a topper for fresh salad greens. The prep for this recipe is quick and it is good! This is especially good because you can marinate the shrimp ahead of time and grill just prior to preparing a light dinner or lunch. You can also make this recipe hearty by adding smoky grilled corn kernels and steamed potato wedges. I have also on occasion taken a note from my favorite Tuna Nicoise with the addition of steamed whole green beans. The good news is, nothing is set in stone with this recipe; so the choices are all yours.

ingredients

8-12 medium shrimp, shelled and deveined
1 tablespoon Old Bay seasoning
1/2 teaspoon cayenne pepper or fresh red pepper flakes
1/2 fresh lemon
Mixed salad greens
Sliced Cucumber
Grape tomatoes, cut in half
I large avocado, peeled and cubed
2 tablespoons olive oil

instructions

Place prepared shrimp in a glass bowl. Add Old Bay seasoning and olive oil to shrimp. Toss to coat well. Cover with plastic wrap and refrigerate for at least 30 minutes.

Meanwhile, build salad with remaining ingredients. Remove shrimp from refrigerator and grill on hot griddle or place under the broiler of your oven. Do not overcook. Shrimp is done when completely pink; about 10 minutes.

Toss into prepared salad and serve with a light lemon or balsamic vinaigrette. To heighten the flavor, add a generous squeeze of fresh lemon juice. Note – lemon juice is also a great way to cut down on the amount of salad dressing and salt.
