Lemon Smothered Chicken with Garlic

If you are on a tight budget, like most people these days, but you crave the flavor of exceptionally good food, then you are going to love my recipe for Lemon Smothered Chicken with Garlic.  This recipe is especially good with chicken legs which tend to be less-expensive and they also maintain maximum moistness when cooked at a low temperature in a dutch oven.  Cook ahead of time and serve up the next day for the best flavor ever.

ingredients

12 chicken legs, lower half removed
1 lemon, thinly sliced
1 medium yellow onion, thinly sliced
Kosher salt, to taste
Fresh coarse ground black pepper
6 cloves garlic, chopped
Fresh thyme
Juice from 1/2 lemon
Olive oil
Flour

instructions

Season chicken legs with salt and pepper. Dredge in flour; just enough to lightly coat chicken. Heat enough olive oil to cover the bottom of a shallow dutch oven. Add chicken legs and brown on both sides. Add onion and garlic to pan and cook until tender. Add lemon slices and thyme and juice from 1/2 lemon. Cover and bake in 300-degree oven until light gravy forms in bottom of pan. To serve, add fresh lemon slices and fresh parsley.
