Soups On!

With the mad rush of the holiday season, it is so easy to forget about the one thing that we all need when exhausted – good food!

After a day of shopping and spreading holiday cheer, there is nothing more satisfying than a big bowl of homemade soup to relax those tired bones.

One of the favorites around our house is butternut squash.

Butternut squash soup is very easy to make and does not require a lot of attention. I usually stick it in the oven to roast off in the morning right after my run and while I take a shower to kick off my day. By the time I am dressed the butternut squash is done and ready to make into an amazing soup. And if you are like this farm girl in the city, you want good food, but seem to always be pressed for time, you are going to love this recipe.

Butternut Squash Soup with Toasted Pumpkin Seeds

Ingredients:

1 medium butternut squash
1 cup coconut milk
1 medium leek, cleaned and diced
Olive oil, enough to coat saute pan
2 cups vegetable or chicken stock
Fresh Ground Black Pepper
Sea Salt, to taste

Instructions:

Preheat oven to 350-degrees.

Wash the outside of the squash to remove all dirt. Split lengthwise. Remove seeds. I usually put seeds on a paper towel to dry out and save for my garden.

Place squash on a baking sheet, lined with aluminum foil. Lightly brush the inside of the squash with olive oil. Place in oven and bake for about 40 minutes or until a fork inserted in the thickest part of the squash goes in without resistance.

To make the soup, saute leeks in a lightly-coated sauce pan and cook until slightly tender.

Scoop out squash and place in a food processor or, my favorite tool in the kitchen, Vitamix blender. Add remaining ingredients and blend until smooth.

Pour squash mixture into a large heavy duty pot. If too thick, add water or additional broth. Bring to a simmer. Season with black pepper and salt to taste.

This can be stored in the freezer or in the refrigerator until ready to eat. Top with toasted pumpkin seeds.
